Creamy bean soup with bacon


1 cup white beans
1 large onion
2 cloves of garlic
60 ml cream
2 bay leaves
salt and pepper to taste
2 tbsp. l olive oil
100 g bacon
sprig of thyme

Thick and delicate cream of white bean soup with fried bacon and cream is a tasty and satisfying dish for a light lunch.

Cooking Method:

1. Pour the beans with cold water and leave overnight. Then drain the water, rinse the beans, add new water and bring to a boil. Add bay leaf and cook until cooked. Peel and chop the onion, chop the garlic.

2. Heat a frying pan with olive oil and fry the onions and garlic until golden brown, then add to the beans and boil for 10 minutes, salt and pepper to taste. Finely chop the bacon and fry until rosy. Pour the water from the beans into a bowl and puree the beans and onions with a hand blender by pouring cream and pouring the broth to the desired density. Serve the soup with fried bacon and thyme.
